CAKE INGREDIENTS

 

 

  • • 1 banana
  • • juice of 1 lemon
  • • 75 g brown sugar
  • • 4 tablespoons flaxseed or chia ‘egg’*
  • • 150 ml vegetable oil
  • • 100 g Hemp Foods Australia Hemp Protein
  • • 75 g all-purpose flour
  • • ½ teaspoon bicarb soda
  • • 2 teaspoons baking powder
  • • 1 cup waste fibre from making fresh juice
  • • handful of Hemp Foods Australia Hemp Seeds

 

Butter cream

  • • 250 g plant-based butter
  • • 450 g icing sugar
  • • 50 ml fresh juice
  • • handful of Hemp Foods Australia Hemp Seeds

  1. METHOD
 
  1. Preheat oven to 200o C.
  2. Mix all cupcake ingredients together in a bowl and spoon into paper cases.
  3. Bake for 20 minutes, remove from oven and cool on a rack.
  4. Combine buttercream ingredients. Spoon onto the cooled cakes, sprinkle with seeds and refrigerate until served. *Made by whisking together 1 tablespoon of flaxseed or chia seeds and 4 tablespoons of water until fully absorbed and thickened to a glutinous, egg-like consistency.
