A modern twist on a fruit cake, these bars are perfect for snacking or gifting during the holiday season.

INGREDIENTS
 
  • •1 kg Natural Road Festive Cake Mix (roughly chopped)
  • •50 g dried cranberries
    •150 g rolled oats
    •150 g honey
    •150 g coconut oil (melted)
    •2 eggs
    •1 tsp vanilla extract
    •Zest of 1 orange
    •1 tsp ground cinnamon
METHOD
 
  1. Preheat the oven to 180°C and line a rectangular baking tin with parchment paper.
  2. Combine the dry ingredients: In a large bowl, mix the Festive Cake Mix, rolled oats, dried cranberries, orange zest, and cinnamon.
  3. Prepare the wet ingredients: In a separate bowl, whisk together the honey, melted coconut oil, eggs, and vanilla extract.
  4. Mix together: Pour the wet ingredients into the dry mixture and stir until well combined.
  5. Bake: Spread the mixture evenly in the prepared tin and bake for 20-25 minutes or until golden brown.
  6. Cool and store: Let the slice cool in the tin until set. Store in an airtight container.
