Loadded Greens Frittata
Bursting with flavour, thanks to creamy coconut milk and zingy feta, this is agreat way to boost veggie intake. Indulge the whole family with this deliciously healthy recipe full of nutrients.

- 2 tablespoons Melrose Organic Coconut Oil
- 4 spring onions, chopped
- 2 garlic cloves, crushed
- 1 teaspoon chilli flakes, optional
- 200 g broccoli, diced
- 1 zucchini, sliced into ribbons
- 1 cup fresh basil leaves, chopped
- ½ cup fresh parsley, chopped
- 2 cups baby spinach
- 6 eggs, beaten
- ½ cup coconut cream
2 teaspoons Melrose Health Essential Greens Powder
¼ cup feta cheesesea
salt and black pepper
Preheat oven to 180°C and line a baking tray with baking paper.
Add oil and ghee to a large saucepan, bring to medium-high heat, and add spring onions, garlic and chilli; stir for 2 minutes. Add broccoli, zucchini, basil and parsley; stir for a further 2 minutes.
Meanwhile, whisk eggs, coconut cream and greens powder together and stir through cooked vegetable mixture. Season and spoon into the tray.
Crumble feta over the top and bake for 30-40 minutes, or until cooked through. Serve warm.
