INGREDIENTS COMPOTE

 

  • • 4 cups mixed berries, fresh
    or frozen
    • 2 tablespoons monk fruit
    sweetener, or preferred
    sweetener
    • juice and zest of 1 lemon,
    1 tablespoon reserved
    • 1 teaspoon vanilla
    • 1 cinnamon stick
    • 1-2 lemon myrtle leaves
    (optional)
    • 3 teaspoons arrowroot
    • ¼ teaspoon ground ginger
    or 1 teaspoon fresh ginger

METHOD
 
  1. Combine all the compote ingredients in a saucepan, except for arrowroot, ginger and reserved lemon juice. Simmer for 5 minutes.
  2. Mix arrowroot with reserved juice and stir into berry mixture with ginger. Simmer for 2-3 minutes untilthickened. Removed from heat, discard solids, and cool.
  3. To assemble, layer fresh berries, a quarter of the compote and youghurt in each of four glasses; finish with a topping of Granola.
