INGREDIENTS
 

1 can of full fat coconut milk or cream by Organic Road (refrigerated overnight)

2 tbsp chia seeds by Organic Road 

2 tbsp sweetener of choice (maple syrup by Organic Road, coconut sugar, agave, etc)

1 tbsp pitaya powder

1/2 tsp vanilla extract

1/2 lime, squeezed

METHOD
  1. Scrape the creamy part of the canned coconut milk that has risen to the top, reserving or discarding the leftover water.
  2. Mix all ingredients together and refrigerate for a few a minutes to thicken.
