INGREDIENTS
 

• 3 beetroots, cubed
• 2 carrots, diced
• 1 sweet potato, cubed
• 1 tablespoon olive oil
• 1 teaspoon dried oregano
• ½ teaspoon sea salt
• 2 cups rocket
• 1 cup quinoa, cooked
• ¼ cup dried cranberries
• ¼ cup sunflower seeds and Hemp
Foods Australia Hemp Seeds

 

DRESSING

• 1 teaspoon grated fresh ginger
• ½ clove garlic
• ½ teaspoon Dijon mustard
• 1 tablespoon honey
• 1 tablespoon apple cider vinegar
• juice 1 lemon
• 1 teaspoon sea salt
• 1 tablespoon tahini
• ½ teaspoon turmeric
• ¼ cup Hemp Foods Australia
Hemp Gold Oil
 
METHOD
 
  1. Preheat oven to 180˚C. Place vegetables on a baking tray with oil, salt and oregano.

  2. Bake for 20-30 minutes, until golden.

  3. Place dressing ingredients in a jar and shake well.

  4. Arrange veggies, rocket, quinoa, cranberries and seeds on a platter

  5. Add dressing and serve.
